8 oz. plain, low-fat yogurt 1-2 tbsp. cilantro (or parsley) 1/4 tsp. curry powder1 cup dry-roasted cashews 1 cup chopped cucumber1 cup chopped red/green pepper1/2 cup chopped red onion4 pita bread rounds, split
Stir yogurt, cilantro, and curry together in bowl. Stir in cashews, cucumbers, sweet pepper, and red onion. Break pitas in half and spoon salad into pita rounds. Makes four half-pita servings.
