1 - Whole Wheat Low Carb Tortilla (Recommendation: La Tortilla Factory with only 3 net carbs!)1 - Organic, Brown Hard Boiled Egg (Warmed) 2 Tbsp - Spicy Black Beans OR Refried Pinto Beans OR 1 Tbsp of Each :) (Recommendation: Eden Foods Organic Beans)1 Tbsp - Greek Plain Yogurt (Recommendation: Stonyfield Organic)2 Slices Each: Red & Green Bell Pepper; Onion (Back up plan: Birds Eye Pepper Stir-Fry from the freezer section)1 Tbsp Organic or Homemade Salsa (Recommendation: Newman’s Own Organic)1 Tbsp Organic or Homemade Guacamole (Recommendation: Wholly Guacamole)

Boiled eggs will last up to a week in the refrigerator, so you can make big batches to have on hand, assemble and heat up for 30-45 seconds in the microwave. If you are not a fan of micro-waving, this wrap can be eaten cold as well. This wrap could easily be the "day after" breakfast from a Taco Tuesday or a Fajita Friday. Having said that, this recipe was created with the intent that these ingredients would be set up on a buffet table, ready to be assembled for a large gathering of people.

The tortillas, eggs, & beans can all be warmed in their own crock pots or chafing dishes. The onions and peppers can sliced and ready for selecting on a platter, then the yogurt (in lieu of sour cream as it is healthier), guacamole and salsa can be ready to scoop from serving bowls. If assembled as listed with the ingredients, the wrap is under 200k with low net carbs, and accommodates a vegetarian diet. The assembly line allows each person to create to their own liking.
