oatmeal pumpkin cookies

6T Butter (salted or unsalted) (could sub EVOO for half)1/2 c Pumpkin Puree1/2 c Okios fat free plain greek yogurt3/4 c brown sugar packed (2/3 works ok too)2 fresh eggs (lg)1 t homemade vanilla extract (or the store stuff)1/8 t each: ginger, nutmeg, cloves, allspice1 t cinnamon1 t baking soda1/2 t salt (optional)1/2 c quinoa flour1 c bread flour3 c old fashioned Oats1/2 c Hersey's cinnamon chips (optional)
Preheat oven to 350.
Mix butter, pumpkin, yogurt, sugar and eggs until smooth. Add vanilla and spices.
Mix flours, soda and salt. Add to wet and combine. Mix in oats and chips.
roll into 1.5" balls and place on cookie sheet (they don't flatten like normal cookies so if you want flat cookies, flatten them with your hand). Put in oven for 8-10 minutes. allow to cool on pan for 2-3 minutes then transfer to cooling rack.
