Roasted Parmesan Potatoes

Ingredients
4 medium Russet Potatoes, washed skin on diced1 Tbsp. olive oil3 Tbsp. grated parmesan cheese2 tsp. dried parsley1 tsp. paprika1/2 tsp. garlic powder1 tsp. salt1/8 tsp. cayenne pepper
Directions
Preheat oven 450 degrees. Spary sheet pan with cooking spray. Slice potatoes in half then cut into half inch cubes. Place potatoes in a medium bowl and toss with oil. Combine parmesan, parsley, paprika, garlic powder, salt, and cayenne pepper in a small bowl. Add Parmesan mixture to potatoes. Toss to coat evenly. Arrange Potatoes on baking sheet. Bake, turing once until potatoes are lightly browned and easily pierced with a knife, about 25 min.

    Made a close version to these. Left the skins on and cut into fries. Put them into a bag and sprayed with cooking spray. Added garlic salt, pepper, and Parmesan cheese then shook the bag and baked them. They were great! Much better than fast food fries and so much better for you!! Will make again! - 8/18/12

    Slightly confused...it says that 4 potatoes are 4 servings, but when looking at the calories by ingredients, it only figures in .25 of a potato as a serving...seems somewhat misleading, but I hear it's really tasty! Should be closer to 200 calories for a whole potato though.. - 3/6/11
