Jenn's Beef Satay Fried Rice

Ingredients
1 tbsp vegetable oil, divided1 tbsp butter2 eggs, lightly scrambled1 lb boneless beef top sirloin, cut into very small pieces2 medium carrots1 medium bell pepper4 large white mushrooms4 green onions1 tbsp Thai red curry paste6 cups cooked rice1/4 cup peanut sauce1/2 cup dry roasted peanuts1 tsp salt1/2 tsp ground pepper
Directions
Slice vegetables into small thin pieces. Heat 1 tsp oil in skillet. Add meat (and a small amount of soy sauce or salt & pepper, if desired) and stir fry on medium-high heat until browned. Set aside and keep warm. Add butter to skillet and cook eggs until just firm. Set aside. Add remaining oil to skillet. When hot, add carrots, cook for 1-2 minutes. Add curry paste and remaining vegetables. Cook until tender-crisp, about 4 minutes. Add rice, eggs, peanut sauce and peanuts, stir-frying until rice is coated and vegetables are almost done. Add meat and stir to mix.
