Ingredients
4 rice paper sheets 8 large shrimp, cooked and sliced in halfhandful of lettuce, cilantro, mint, basil, etc. 2 oz soba noodles, cooked and cooled
Directions
Assemble all ingredients.

Soak one paper sheet at a time until soft but still slightly firm. Place on a plate and assemble 4 shrimp halves, then cilantro, then lettuce, then noodles. Fold in edges and roll. Repeat with the remaining three sheets.
