Ingredients
Directions
1 1/2 lbs. chicken breast, trimmed and cubed1/2 C chicken broth4 T butter1 tsp minced garlic (or 1 clove)1 tsp lemon zest (recipe called for 2 but I prefer less)2T whole wheat flour2 C 1% lowfat milk2T low or fat-free cream cheese3/4 grated Parmesan cheese3 T parsley1 pkg whole wheat pasta (mine was angel hair-13.25 oz )16 oz pkg frozen broccoli
Spray bottom of pan lightly with olive oil. Place chicken breast pieces in pan, sear a little on all sides then add broth and simmer while making sauce. Melt butter over low-medium heat in heavy saucepan, careful as to not let it scorch. Add garlic and lemon zest. I usually start water for pasta now. Gradually add flour then milk. Stir constantly until just bubbly and thickened over medium heat. To sauce mixture, add cream cheese, Parmesan cheese ans parsley; stir until all blended. Combine chicken with sauce keep warm on low heat. Add pasta to boiling water. Steam broccoli. All should be ready in about 5-7 minutes.
