Grilled Pork & Pineapple

Ingredients
4 boneless top loin pork chops (about 1 lb)1/2 peeled and cored fresh pineapple2 tablespoons no sugar added orange preserves1/2 cup non fat greek yogurt, plain 2 tablespoons cashew halves, coarsely choppedsalt & pepper, to taste
Directions
1. Sprinkle pork lightly with salt and pepper. Cut pineapple into 1/2-inch-thick slices; set aside.

2. Place chops on the rack of uncovered grill over medium coals for 4 minutes. Turn; add pineapple. Brush chops and pineapple with 2 tablespoons of the preserves. Grill 3 to 5 minutes more or until cooked through, turning pineapple halfway through grilling.

3. Meanwhile, combine yogurt and remaining preserves. Arrange pineapple and chops on plates. Top with yogurt and sprinkle with nuts.
