Sweet Potato Pancakes

Ingredients
1 Cup Wheat Flour1 Cup Milk2 Eggs1/2 Cup Cottage Cheese1/4 Cup Oil1/4 to 1/2 Cup Sweet Potato Puree2-3 Ground Flax Seed1 teaspoon Baking Soda1/2 teaspoon Baking Powder1 teaspoon Vanilla2-3 Tablespoons Brown Sugar
Directions
In Blender mix together milk and flour. Add eggs, cottage cheese, oil, sweet potato puree, and flax seed. Blend again. Add baking soda, baking powder, vanilla, and brown sugar. Blend again. Cook on a griddle over medium heat.

    I loved these! I had to sub in Arrowhead Mills Gluten Free flour mix, and nix the flax (none in the house) but even so it was really tasty! I added a bit of cinnamon to another batch and it was even tastier! - 12/8/11
