Ingredients
1 small cucumber1 tomato1 small sweet onion1 teaspoon olive oil1 Tablespoon red wine vinegarSalt and pepper (optional)1/2 cup (2 ounces) crumbled low-fat feta cheese
Directions
Coarsely chop cucumber, tomato and onion; transfer to a bowl. Add oil and vinegar; toss well. Season to taste with salt and pepper, if desired. Transfer to serving plates; top with cheese.
