Chicken and Spinach Casserole

3 cups cooked, diced Chicken breast10 oz pkg frozen chopped Spinach, thawed, drained well1 small Onion1 small Bell Pepper1 Tbs Olive oil8 oz Cream Cheese, softened1/3 cup Sour Cream10 oz can crushed diced tomatoes, drained8 oz Cheddar Cheese1/4 tsp Cumin1/2 tsp Chili Powder1/2 tsp Garlic SaltSalt and Pepper to taste
1. Saute Peppers and Onions in Olive OIl until opague.
2. Mix all ingredients except cheddar cheese in bowl until mixed well.
3. Pour into a greased 2 1/2 quart casserole dish.
4. Sprinkle with shredded Cheddar Cheese.
5. Bake at 350 degrees for 40-50 minutes or until heated through and bubbly.
