Zucchini mini cheese bites

Zucchini 2 cups finely grated1 egg0.5 cup fresh grated parmesan cheese
Grate zucchini with hand grater or food processer/slicer
Place zucchini into clean kitchen cloth and squeeze out all excess water. Grate parmesan cheese with cheese grater or in food processor. Mix the zucchini, egg and cheese together. Spray a mini muffin tin with non stick cooking spray. Press zucchini mixture into cups, filling to top. Bake in 400 degree oven preheated for 20 min. Enjoy!
