Ono Pineapple Coconut Butter Mochi

1/2 pound mochiko (glutinous rice floor)1 1/4 cups white sugar1/2 tsp baking powder1/4 cup butter1 1/2 cups whole milk2 1/2 eggs1/2 tsp vanilla extract1/2 cup sweetened, flake coconut1/2 cup crushed pineapple
1. Preheat oven to 350 degrees F. Grease 4 1/2 x 7 1/2 inch baking dish.
2. In a small bowl, whisk together the eggs, vanilla and milk. In a separate larger bowl, stir together the rice flour, sugar, and baking powder. Pour the wet ingredients into the dry ingredients, and stir to blend. Mix in the melted butter, pineapple and coconut. Pour into the prepared pan.
3. Bake 1 hour in the preheated oven. Cool completely, then cut into eight pieces.
Serving Size: Makes 1 - 4 1/5 x 7 1/2 inch pan, 8 pieces
