2 cups oat bran1/4 cup firmly packed brown sugar2 teaspoons baking powder 1/2 teaspoon salt (optional)1 cup almond milk 1/3 cup egg white replacer1/4 cup molasses2 tablespoons flaxseed oil1 small banana, mashed2 tablspoons chopped pumpkin seeds
heat oven to 425. line 12 medium muffin cups with paper baking cups or spray bottoms with nonstick spray. combine dry ingredients; mix well. add combined milk, egg whites, molasses and oil; mix just till dry ingredients are moistened. fill prepared muffin cups 3/4 full. bake 15-17 minutes or golden brown
