My Guacamole

Ingredients

3 ripe avocados (although depending on consistency you may want to do one per person)1 white or yellow onion2-3 jalapeno peppers (fresh)2 tomatoes (your preference-- I like mine simple and from Mexico for traditional flavor)Fresh cilantro bunch2-3 limes
Chop onion, tomato and jalapeno and keep separate from each other.
Take a large pinch of chopped onion and less jalapeno, and a few fresh teaspoons worth of cilantro w/stems removed and place inside mortar. With pestle begin to grind and mash until just combined. Add the juice of a half lime and continue mashing.
Cut avocado in half, take out the pit and use a soup spoon to scoop out insides. Slice if necessary (sometimes they are not as ripe as you think) and add to mash. Continue mashing avocado and when desired consistency is achieved transfer to a large bowl. Add a large pinch of chopped tomato and mix in well.
Continue until all ingredients are mixed.
**Please note, I do this in small batches because sometimes I'll use too much onion, lime juice tomato, etc and it helps me to even it out. Also, my mortar and pestle are for small amounts. You do not have to do it this way. You can also add salt if you like, my recipe is not calculated for that. Enjoy!
