Basic Crepes

4 eggs, beaten1 1/3 cup ff milk1.5 TBL cooking oil1 cup flour.5 tsp salt--optional
Makes 16-18 nice crepes for me, could be more or less depending on the size of your pan.
Beat the ingredients carefully using a wire whisk, let rest if you have time, if not, I make them straight away frequently. Pam your small frying pan and heat well on Med high heat.
Swirl in batter, this takes some practice but isn't hard.
Let bottom cook, then lift and flip with spatula, don't bother tossing in the air, not worth it.
Cook other side very briefly, then turn onto a waiting dinner plate and start again until you have a stack of them.
Roll or fold with jam, jelly, butter, brown sugar, syrup, nothing, lemon juice and sugar--mmmm., fresh fruit, ice cream, sorbet, chocolate sauce......but count the calories for whatever you put in there.
