Roasted Red Pepper Potato Salad dressing

Ingredients
1/2 cup virgin olive oil1/4 cup raspberry vinegar or red wine vinegar (I use white balsamic vinegar)1.5 teaspoon Dijon mustardSalt and white pepper to taste
Directions
Combine the vinegar and salt. Allow salt to dissolve. Add mustard to incorporate. Whisk in the oil until emulsified. Add pepper.
