Chili Con Queso

Ingredients
1/2 cup yellow onion, finely chopped2 teaspoons I can't believe it's not butter light2 medium tomatoes, peeled, seeded, & chopped4 tablespoons green chili peppers, chopped3/4 cup fat free shredded cheddar cheese, shredded1/2 cup low fat Monterey Jack cheese, shredded1 cup fat free cream cheese, softened1-2 tablespoons skim milk (optional)
Directions
1. In a medium saucepan cook onion in butter until tender. Stir in tomatoes and chili peppers.. Simmer, uncovered, for 10 minutes.

2. Add cheeses, beginning with cream cheese, until all mixed. You will want to add shredded cheese slowly so that it melts smooth. If mixture becomes thick, stir in milk, 1 teaspoon at a time, until desired consistency. Serve warm.
