2 Sweet Potatos, sliced2 Red Potatos, diced 1 Medium Onion, sliced1 clove garlic, minced2 Carrots shreaded2 T Olive OilItalian SeasoningPam cooking spray
1. Preheat oven to 350 degrees F
2. Coat the bottom of a baking dish with cooking spray. Spread sweet potatoes on the bottom, then top with red potatoes, onion, garlic, and carrots. Sprinkle seasoning generously over all and cover dish with aluminum foil.
3. Bake at 350 degrees for 1 hour or until potatos are cooked through; remove foil cover and stir.
4. Change oven temperature to 425 degrees and bake mixture in oven for another 1/2 hour, or until browned on top.
