Indian-Style (Mustard) Greens with Lentils

Greens, 16 oz (I prefer mustard greens)Lentils, 1 cup Extra Virgin Olive Oil, 1 tbsp Onions, raw, 1 cup, chopped Garam Masala, 1 tbsp Chili Powder, 1 tbspCoriander seed, 1 tbsp Cumin seed, .5 tbsp Ginger Root, 1 tbsp Garlic, 5 cloves Turmeric, ground, 1 tsp Canned Tomatoes, 1 can Lemon Juice 'Real Lemon' 100% juice, 2 tbsp
Prepare lentils. While they are cooking:
Toast whole cumin and coriander in a dry skillet until fragrant. Saute onion, garam masala, coriander and cumin (ground) until onions are translucent, add ginger, garlic and turmeric. Saute until garlic begins to brown, add mustard greens and cook until wilted. Add tomatoes and lemon juice and continue to cook until greens are tender and tomates are heated through. Toss with or serve over lentils.
