Crockpot Pot Roast

Ingredients
4 lb top roast, trimmed30 baby carrots3 stalks celery, large chopped3 lb red potatoes, chopped9 cloves garlic, smashed and sliced1 large yellow onion, large chopped1 c beef broth (low sodium)3 bay leaves1 T pepper
Directions
Makes 12 very generous servings

Chop celery and potatoes to bite size pieces. Smash garlic cloves to remove peel, then slice into 2-4 pieces. Remove the skin from the onion and cut into large pieces.

Add all veggies (including carrots) to crock pot first. Add beef on top. Slice in half to fit, if needed. Add beef broth, pepper, and bay leaves.

Cook on low for 8 hours and enjoy. It's great the next day, too!
