Spinach Stuffed Chicken Breast

1/4 cup crumbled feta cheese8 oz boneless skinless chicken breast( pounded flat )1 tsp extra virgin olive oil1 cup spinach1 tsp black pepper1 tsp salt1 tsp lemon peel1 small chopped onionDirections
Pound chicken breast to 1/4inch thickness to make rolling easier.
In a large non-stick skillet, heat olive oil; sauté onion until golden, 5 minutes.
Wilt spinach (steam or heat damp in pan); stir in lemon zest, feta, salt and pepper. Set aside.
Divide spinach mixture between chicken breast cutlets.
Roll up and secure with toothpicks.
In same skillet, heat remaining oil over medium-high heat.
Cook chicken, turning occasionally until golden brown and cooked through, about 10 minutes.
Remove toothpicks.
