Turkey Meatloaf Muffins

1 teaspoon olive oil 1 cup diced onion 1/2 cup diced carrot 1 teaspoon dried oregano 2 garlic cloves, minced 1 cup low-sugar ketchup, divided 1 1/2 pounds ground turkey, extra lean 1 cup corse bread crumbs 2 tablespoons Dijon mustard 1 teaspoon Worcestershire sauce 1/4 teaspoon ground pepper 1/2 cup egg beaters Cooking spray
Heat olive oil in a large nonstick skillet over medium-high heat. Add diced onion, carrot, dried oregano and garlic; sauté two minutes. Cool. Combine onion mixture, 1/2 cup ketchup, and the remaining ingredients except cooking spray in a large bowl. Spoon meat mixture into 12 muffin cups coated with cooking spray. Top each with 2 teaspoons ketchup. Bake at 350 degrees for 25 minutes. Let stand five minutes. This recipe is easily doubled, and makes great lunch
leftovers as well.
