Ingredients
2 cups flour1 1/2 cups sugar1 cup oil3 large eggs3/4 cup pumpkin puree1 teaspoon salt1 teaspoon ginger2 teaspoon cinnamon1/2 teaspoon fresh nutmeg1 tablespoon vanilla1 teaspoon baking soda1 teaspoon baking powder1/2 cup chopped raisins (optional)
Directions
Directions:

1. Put oil, sugar, eggs and vanilla in mixing bowl and beat until smooth 5 mins.

2. Combine remaining dry ingredients and slowly to the mixng bowl.

3. Add raisins to the batter (carefully fold in).

Makes 12 servings.

    Great recipe just missing a few details. I didn't have enough vanilla so I used half vanilla half agave. I added the pumpkin purée after I beat the sugar, oil, eggs, vanilla & agave smooth. I baked it in a 9x13 greased pan at 350F for 30 minutes until toothpick in centre came out clean. Yum! - 1/27/13
