Rosemary and Olive Oil Slow Cooker Chicken

Ingredients
8 cloves garlic, sliced1 Tbsp dried rosemary, crumbled between your fingers1/2 tsp kosher salt1/2 tsp black pepper3 Tbsp Extra Virgin Olive Oil3 Tbsp white wine2 Tbsp water2 lbs skinless, boneless chicken breastscooking spray
Directions
Spray slow cooker with the cooking spray. Mix all ingredients except the chicken in the slow cooker. Mix well. Add the chicken one piece at a time, making sure to turn each piece to cover. Cook on low for eight hours or high for four hours. Makes approximately 8 servings of 4 oz each.

This goes great with rice or couscous and your favorite steamed vegetables. Leftovers are great for a pasta dish or salad the next day.

    I liked this and was very happy that the ingredients are things I stock in my kitchen. I used thighs instead. I will make it again but I will add slices of onion or shallot. And use the longer time at low. I ate it with litely sauteed cherry tomatoes and brown rice to complete the meal. - 10/14/10

    Very good! My husband & 2 year old enjoyed it as well. I took the advice of previous posters - shredded the chicken & let it sit a bit longer to absorb the juices. I'll probably cut back on the rosemary a bit next time simply b/c it was a bit strong for my taste. Thanks for sharing! - 8/8/11

    This was so easy to make, I did not have very high expectations...but it was surprisingly delicious! I followed another reviewer's lead, and shredded the chicken breast so it could soak up some of the delicious sauce.     I used rice wine because that's what I gad! It was epic! Put in twice the chicken so half are being frozen with other recipes but thus was great with some grains and steamed veg! Great basic and juicy 😁 - 2/17/16

    I enjoyed this recipe. I think it is a great starting point because I found the final product a bit bland. I added in fresh parsley, lemon zest and some fresh lemon juice. In the future would probably add onions, etc. But this is a great starting recipe. I like others shredded the chicken - 1/15/16

    It's tender and juicy, and a nice subtle flavor. I didn't have wine on hand so I used lemon juice instead; I might cut back the rosemary to 1/2. I think this would be an EXCELLENT way to cook chicken to mix in casseroles and for chicken salad (which is how I plan to use up the leftovers)! - 8/10/12
