16 oz boneless skinless chicken breast8 oz chicken thighs 1 10 oz can cream of celery soup1/2 packet onion soup mix2 green bell peppers, chopped1 onion, chopped2 cups uncooked rice, parboiled kind4 cups waterSalt/pepper to taste
Place chicken in crockpot. Cover chicken with cream of celery soup, then sprinkle onion soup mix on top. Add chopped bell peppers & onions. Cook on high for 4 hours or low for 6-8 hours.(You can cook rice ahead of time if you prefer and keep in fridge until ready to use.) In a separate pot mix 2 cups uncooked rice & 4 cups water together and cook as directed on rice package. After chicken mixture has cooked in crockpot, shred chicken with fork. Next add cooked rice to crockpot until mixed.
