4 egg whites2 tsp cornstarch1 (15oz) can low sodium black beans, rinsed & drained1/2 cup plain bread crumbs1/4 cup fat free cheddar cheese, shredded 1/2 cup fat free mozzarella cheese, shredded 1 clove garlic, minced2 Tbsp cilantro, minced1/2 tsp cumin1 tsp lemon juice2 tsp olive oil
1. In a large bowl, combine egg whites and cornstarch; beat with wire whisk until smooth. Add beans, bread crumbs, cheese, cilantro, garlic, cumin, and lemon juice; mix well. Shape into five patties.
2. Heat oil in large skillet over medium heat until hot. Add patties; cook 14 - 16 minutes or until deep golden brown and centers are hot, turning once.
