Mango Lime Chicken

Ingredients
1/4 tsp cumin1/4 tsp ground ginger1/8 tsp thyme1/2 tsp dried corianderdash nutmegdash cayenne8oz skinless, boneless chicken breast1/2 mango, peeled & diced1 scallion, diced1/8 tsp salt1 Tbsp lime juice
Directions
In a small dish mix all spices except the salt together. Sprinkle both sides of chicken breasts with spice mixtures.

Coat skillet with cooking spray and cook chicken breasts over medium high heat, turning occasionally, until both sides are deep golden brown and chicken is no longer pink inside; about 10-15 minutes.

Add diced mango and scallion to skillet. Cook for another minute, stirring, just until heated through. Remove from heat. Sprinkle with salt and lime juice and serve.
