4 tsp olive oil2 onions, chopped2 green bell peppers, chopped2 tsp minced garlic2 lbs ground turkey (93%)2 Tbsp lemon juice2 Tbsp ground cumin64 oz bottle low sodium V82 cans red kidney beans, rinsed and drained28 oz can crushed tomatoes2 1/2 Tbsp dried parsley
1. Brown ground turkey. Drain and set aside.
2. Heat oil in large stockpot over medium-high heat. Saute onions, garlic, and bell peppers until soft. (About 5 minutes).
3. Stir in remaining ingredients (except parsley). Cover and simmer about 20 minutes. Add parsley; simmer another 10 minutes.
Serving Size: Makes 8 2 cup servings (heaping)
