Chicken Chili - Cafe Latte

2 TBSP olive oil20 ounces uncooked chicken breast, chopped up1 1/2 cup chopped onion1/2 tsp red pepper flakes1 TBSP minced garlic1/2 cup canned green chills or 2 tsp jalapeņo pepper1 cup chicken stock1 to 3 TBSP chili powder (as spicy as you like it)1/2 tsp cumin28 ounces tomatoes, canned chopped salt free4 ounces tomatoe sauce or 2 cups puree for "more sauce"2 - 16 ounce cans kidney beans, chili beans1 can black beans or garbanzo beans1/2 cup chopped cilantro1/2 lime , juiced
Saute chicken, onion and garlic in olive oil until done.
Add the rest, except cilantro and lime. Simmer 20 minutes or longer. Add cilantro and lime juice and cook an additional 5 minutes.
Serve topped with sour cream, shredded cheese and onions, as preferred.
