Peach and Blueberry Muffins (Vegan)

2 c Flour, white 2 tsp Baking Powder1 tsp Baking Soda1/4 tsp Salt1/2 c brown sugar1 c + 2 Tbsp Soy Milk1 Tbsp Lemon juice1/3 c Canola Oil1 tsp Vanilla Extract1 c chopped Peaches1 c fresh Blueberries
Heat oven to 350.
Stir dry ingredients together in a large bowl..
Whisk wet ingredients and sugar in medium bowl until well blended.
Stir fruit into dry ingredients.
Fold wet to dry just until moist.
Spoon into muffin tins (parchment lined)
Bake about 20 minutes, till toothpick comes clean.
Serving Size: makes 12 large muffins
