Sweet and sour sesame eggplant with brown rice

Ingredients
Fresh eggplant, 8 cups cubedKetchup, two cupsBalsamic Vinegar, 8 tbsp Red wine vinegar, 8 tbspOnions, raw, .5 cup, chopped Ginger Root, 3 tsp Garlic powder, 3 tbsp Brown Sugar, .5 cup, unpacked Raw wild honey, 4 tbsp Crushed Red Pepper, 1 tsp Pepper, black, .5 tsp *paprika, smoked, 1 tsp cumin powder, 1 tbspOrganic Sesame Tahini, 6 tbsp Almond Butter, 2 tbsp8 cup cooked brown
Directions
Throw everything but the rice into the crockpot. Cook it on high for first hour, and turn it to low for the last two hours. Take whatever time you need to prepare brown rice before serving.
