Good for You Oatmeal Cookies

Ingredients
1-1/4 cups unbleached flour1/3 cup soy flour1/3 cup whole wheat flour2 cups oatmeal1 tsp. baking soda1/2 tsp. salt1 tsp. cinnamon7 T softened butter1/2 cup canola oil3 T milled flax seed1/2 cup sugar1/2 cup brown sugar1 tsp. vanilla2 large eggs1 cup raisins (optional)
Directions
Combine first 7 ingredients, mix together and set aside. Mix together butter, oil and sugars. Add flax seed, vanilla and eggs. When all is well blended, add raisins and dry ingredients that were set aside.
Chill the dough a few minutes in the freezer. Drop by teaspoonfuls or a mini ice cream scoop onto cookie sheet covered with parchment paper. Bake at 375 degrees for 8-9 minutes. Unless you want crispy cookies, don't overbake.
