Quick & Easy Canned Salmon Patties

Ingredients
1 can Pink Salmon (usually around 14 oz.)1 Egg (beaten)1/2 cup Milk (skim is used in this recipe)3/4 cup Saltine Cracker Crumbs1 t. Chopped Onion (optional)1 t. Old Bay Seasoning (optional)1 T. Lemon Juice1 T. Flour
Directions
Remove Pink Salmon from can. You can remove the bones, however, if you crush them up it is added calcium (they are edible and very soft).

Place saltine crackers into a zip lock bag and crush them. Measure out 3/4 cup.

Add the beaten egg, milk, cracker crumbs, onion, seasoning, lemon juice, and flour to the salmon. Mix together (easiest to mix together with your hands).

Form the salmon mixture into patties (usually about 6).

Heat up a griddle with melted butter (just enough to coat the pan). Place the salmon patties on the griddle and cook about 7 minutes on each side until browned on each side.

Serve and enjoy!

    I really like this. I used Panko crumbs as that is what I had on hand. I didn't have Old Bay but used a tsp of Chicken Seasoning. Instead of butter I used Coconut Oil. They came out nice and crispy on the outside and moist on the inside. Very good. Will make again. - 2/23/15
