Tofu Scramble (2-cup serving)

Ingredients
1 tablespoon olive oil� teaspoon garlic, chopped� cup chopped onion, diced� cup mushrooms, sliced1 package firm tofu, drained & mashed� red pepper, sliced� tomato, diced1 green onion, sliced� cup cheddar or other cheese, gratedSalt and pepper to taste1 tablespoon basil or other fresh herb,chopped (optional)
Directions
In a non-stick pan heat oil. Saut� onion &
garlic until softened, then add mushrooms.
Add tofu when mushrooms are � done.
Saut� over medium high heat for about 5
minutes while stirring. Add red peppers, salt
and pepper halfway through cooking time.
Finish scramble by adding basil and tomato.
Mix, sprinkle with cheese and green onion
and cover with lid until cheese melts. Yum.
