Southwestern Broccoli Cheese Soup

Ingredients
4 c. water4 chicken bouillon cubes4 c. fresh broccoli florets3 c. frozen southern-style has brown potatoes1 c. chopped carrots1 c. chopped celery1/2 tsp salt1/2 tsp pepper3 Tbs. flour2 c. Fat-free milk6 oz reduced fat Velveeta cheese, cubed1 c. chunky salsa
Directions
In large saucepan combine water, bouillon cubes, vegetables, salt & pepper. Bring to boil. Reduce heat, cover and simmer for 8-10 min. or until veg. are tender. Combine flour & milk gradually stir into soup. Bring to boil, cook for 2 min or until thick. Reduce heat to low, add cubed cheese, cook and stir until melted. Add salsa, cook and stir until heated. Makes 9 servings
