1/2 cup ricotta cheese (I used low fat)1 egg1/4 cup pumpkin Pinch saltSweetners and flavorings to taste (I used 2 T almond butter and 2 T honey)2 T chia seeds (or flax seeds)
I use a non-stick skillet with a little butter melted on it, but a pan spray would be fine too.
Whisk together the ricotta and egg. Whisk it well so there are no separate strings of egg white. Add pumpkin puree and salt. Add chia seeds, if using.
Whisk well and pour into hot pan. Stir over medium heat as if you are scrambling eggs. It will get a bit of a grainy texture as the eggs cook and this is when it is done. Dump into a bowl or two and add almond butter and honey (or whatever sounds good to you and fits into your diet).
Serving Size: Makes 2 small servings or 1large serving
