Spicy Red Lentil Soup

Ingredients
Red Lentils, 1 cup Carrots, raw, 2 medium dicedCelery, raw, 3 stalk, medium diced Brown Onion, raw, 1 large diced Chicken stock, 5 cups Curry powder, 1 tbsp (your favourite)Coriander leaf, fresh, 2 tbsp choppedGarlic, 2 clove crushedFresh Ginger Root, 3 tsp gratedCanned Tomatoes, 400 grams 1 cinnamon stickPepper to taste1 tablespoon of Greek or natural yogurt and fresh coriander to serve.
Directions
Prepare fresh vegetables and sweat on a low heat. Add the garlic and ginger then curry paste and cinnamon stick. Add the canned tomatoes and chicken stock and bring to a simmer. Add the lentils and cook until the lentils are soft (approx 20 mins) then add chopped coriander. Serve with a dollop of yoghurt and top with chopped fresh coriander.
