Burger Crumble (Vegetarian)

3 TBS olive oil1 cup COOKED Quinoa½-1 onion diced2 cloves garlic (1 tsp)3 cups mushrooms, diced1 TBS Cumin2 TBS Chili Powder¼ Tsp SaltCayenne Pepper to TasteGarlic Salt to Taste4 TBS Lemon Juice (Juice of 2 Lemons)½ Can Black Beans2 Cups Shredded Spinach½ Cup Chopped Walnuts½ Cup Bread Crumbs
Sautee Onion and Garlic in Olive Oil in Skillet on Medium Heat. When onions are translucent and slightly yellowed, reduce heat to medium-low.
Add Mushrooms, cumin, chili powder, salt, cayenne, garlic salt, lemon juice, and black beans. Saute until mushrroms are tender.
Add spinach and stir. Once spinach is cooked, reduce to low heat.
Add walnuts and bread crumbs. Mix well.
Add cooked Quinoa. Mix well.
