Chocolate Zucchini Muffins

1/3 cup honey1/4 cup molasses1/4 cup coconut oil2 eggs1 banana3/4 cup plain yogurt (2% greek)1 tsp vanilla2 cups grated zucchini2 cups whole wheat flour1/4 cup ground flax seed1/2 cup unsweetened cocoa powder1/2 tsp salt2 tsp baking soda1 tsp cinnamon1/4 cup chocolate chips
Preheat oven to 375. shred zucchini and squeeze out excess moisture with paper towels. Mix wet ingredients together with a stand mixer (or hand mixer), incl. the zucchini. In a separate bowl, whisk together the dry ingredients and add to wet. Lastly, add the mini chocolate chips and stir just until incorporated. Spoon into greased muffin tin or cupcake liners; fill each well halfway (a large cookie scoop works well). Bake for 20-25 minutes or until a toothpick comes out clean.
