Balsamic Tuna Salad

Ingredients
Directions
1 16 oz can of tuna1 small red onion, sliced thinly20 kalamata olives15 cherry tomatoes (I use heirloom)3 tablespoons mayonnaise (you can use a light variety for less calories, but I make mine)3 tablespoons balsamic vinegar4 anchovies, smashed (optional)
Slice your red onion, kalamata olives, and tomato and put it into a bowl. Add the anchovies. Stir. Add the balsamic vinegar and mayonnaise. Stir until coated. Slowly add the tuna, stirring to coat the tuna in the dressing.
I say it makes about 6 half cup servings, but it really depends on how big the tomatoes and onion are. I've gone up to a full cup and it's been about the same calorie wise because the veggies don't add too many calories.
I usually have this on a baguette or roll, but that isn't included in the nutritional content.
Serving Size: makes about 6 half cup servings
