Trout with Cream & Honey Sauce

Ingredients
9 oz Trout1 tsp Honey3.5 Tbs Butter2 oz Whole almonds -- skinned4 Tbs Fresh heavy cream1 Tb Lemon juice1 cup Flour (seasoned to taste)1 cup Milk (to soak trout in)
Directions
Chop the almonds finely. Prepare the fish, wash and dry and then soak in milk for 5-10 minutes. Toss in seasoned four. Melt half the butter in the frying pan, and fry the fish for 5-7 minutes on each side. Make the sauce by melting the rest of the butter, adding the chopped almonds. Saute for a few minutes. Then add the honey and lemon juice; bring carefully to simmering point, and add the cream last, making sure the temperature is fairly low so it won't curdle. Pour over the fried fish, and serve garnished with lemon.

    This was excellent. But I will admit the directions are very poorly written for someone who may not be an experienced cook. At first I thought it wanted me to fry for 5-7 minutes on each side for a total of 10-14 minutes. And that is way too long for a fillet of fish on med-med/high heat. - 6/11/13

    This was delicious and easy to make. It filled me right up! I actually used tilapia rather than trout because the grocery store didn't have trout. Also, tilapia has a lighter taste to it and a few less calories. I would make a little extra sauce next time.
