Ingredients
1 lb extra-lean ground sirloin1 medium onion, diced (1 cup)1 cup green pepper, chopped or strips2 cloves garlic, minced1 can Ro-Tel1 can canned tomatoes1 can black beans1 can kidney beans2 tbsp chili powder2 tbsp paprika1 tsp ground black pepper1/2 bag (2.5 cup) frozen carrots, broccoli, cauliflower
Directions
Heat a dutch oven or similar large pot over medium high heat. Add the ground beef, onions and peppers, cook 3 minutes, and turn down the heat to medium. Stir occasionally while continuing to cook. Turn down the heat to medium-low and add the garlic. Continue to cook about 3 more minutes or until the meat is thoroughly browned. Add the tomatoes, beans and seasonings (adjust to taste). Mix well and allow to simmer for about 5 minutes. While the chili is simmering, place the frozen carrots, broccoli and cauliflower in blender or food processor and chop until pulverized into tiny pieces. Add the pulverized frozen vegetables to the chili. Continue to simmer for 30-60 minutes. Add water if the chili gets too thick.

    This is a surprisingly good recipe. The finely chopped California mixed vegetables hide in there adding lots of nutrients. We have made this a couple of times and really like it! - 1/17/17
