Kicked Up Chicken Salad

Ingredients
One can Chicken Breast, drained1 tablespoon of light mayo1 teaspoon of mustard (spicy is best!)1 tablespoon of sweet pickle relish1/2 medium onion (chopped)1/2 teaspoon of garlic (i use the kind in a jar)
Directions
saute onions and garlic in non-stick skillet until onions are tender. Meanwhile, drain chicken. Mix all ingredients into medium-sized bowl until all moistened. serve immediately or refrigerate.

I usually eat this with low-fat triscuits, or an easy meal idea is open-faced sandwiches.
Open-Faced Sandwiches:
place 1/4 cup of chicken salad onto whole wheat bread, top with 1 slice of low-fat cheese and bake in oven at 350 degrees until cheese is melted! (makes 6 servings)
