Sauted Leeks and Feta

2 leeks cut into 1in pieces using white and green parts2 small zucchini diced into little cubes2oz full fat feta2T dry dill1c. red potato, thinly sliced1/2t salt1/4t white pepper1T extra virgin olive oil
Preheat oven to 375. Heat oil then add leeks, zucchini, salt and pepper. Sauté while stirring occasionally until tender (about 5 min) Turn off heat, stir in feta and dill.
Place alternating layers of potatoes and leeks in a round casserole dish, ending with the leek mixture on top. (I also lightly salt the tops of the potatoes before adding mixture) Bake about 30 minutes or until potatoes are tender,
