Aleecha (hot vegetable stew)

Ingredients
onion 1 choppedcarrots 4 slicedcelery 4 stalks slicedcabbage 1 head cut uptomatoes 3 cut uphot peppers several podsbell peppers 2 dicedpotatoes 4 chopped
Directions
Heat a couple of tbsp. oil Add onions and cook until tender. Do the same for the carrots and celery. Cut up the cabbage and allow to simmer cooking up slightly. Add 1 cup of water when needed. Add tomatoes, hot peppers and bell peppers. Cook until tender. Add potatoes. Cook all until tender. Meat can be added if desired, but it's good with just the vegetables. Also, it always tastes better the 2nd day once all of the flavors mingle.
