pumpkin pecan coconut muffins

Ingredients
1 can pumpkin, 14-15 ounce.75 cup honey1-2 eggs2 tsp baking soda1 cup flour, white or wheat.5 cup chopped pecans (or any kind of nut)1 cup uncooked plain oatmeal.5 - .75 cup of coconut (if you don't like coconut could add raisins, crushed drained pineapple etc.)1 tsp ginger.25 cup cinnamon1 tsp nutmegpour in muffin tins and bake (use muffin tin liners)
Directions
preheat oven to 375, bake 25 minutes, test along the way by inserting knife in middle of cupcake, adjust time accordingly. Knife should come out clean when done.
