Coconut Muffins

Ingredients
1/4 cup unsweetened applesauce1/4 cup coconut oil, melted & cooled1 1/4 cup flour1 1/2 tsp baking powder1/4 tsp salt1 cup fat free greek yogurt1/4 cup Splenda3 Tbsp sugar2 egg whites1 tsp coconut extract1 tsp almond extract1/4 cup unsweetened coconut, shredded
Directions
1. Preheat oven to 375 degrees. Line 12 cup muffin tin with paper liners and set aside.

2. In a medium bowl, whisk together the flour, baking powder and salt. Stir in 1/2 of the coconut and set aside.

3. In the bowl of a stand mixer, combine the egg whites, sugars, coconut oil, yogurt, coconut extract and almond extract.

4. Slowly add the flour mixture to the yogurt mixture, taking time to mix between each addition. Mix just until combined, do not over mix. Scoop batter into the prepared muffin tin and sprinkle the tops with the remaining coconut.

5. Bake 20 minutes or until a toothpick inserted into the center of a muffin comes out clean.

6. Cool muffins in the pan for 10 minutes then transfer to a wire rack to cool completely.
