Ingredients
.33 cups Vegetable Oil (one-third cup)1 whole Onion, Chopped3 whole Garlic Cloves, Chopped2 whole Celery Ribs, Chopped1 whole Green Bell Pepper, Chopped2 pounds Shrimp, Peeled And Cleaned1 pound Smoked Sausage, Cubed2 cups Uncooked Rice2 cups Chicken Broth1 cup Diced Tomatoes1 teaspoon Cayenne Pepper.5 teaspoons Crushed, Dried Thyme (half tsp)1 whole Bay LeafSalt To Taste1 Tablespoon Fresh Parsley, Chopped
Directions
Heat oil in a large saucepan.

Saute onion, garlic, celery and green pepper over medium-high heat about 5 minutes or until vegetables are tender.

Add shrimp and sausage; cook for 10 minutes.

Add rice, broth, tomatoes with liquid, cayenne, thyme, bay leaf, and salt. Cover pan and bring liquids to a boil.

Reduce heat until liquids are simmering; cook covered about 30-40 minutes or until liquid is absorbed and rice is tender.

About 5 minutes before dish is done, stir in parsley.
