Mexican Bean Salad

Ingredients
1 yellow onion1 bell pepper1 1/2 lbs extra lean ground beef1 bunch of scallions (green peppers)1 16 ounce can of kidney beans1 16 ounce of Catalina Dressing
Directions
cut onion, bell pepper, and white parts of scallions (green onions) set green parts aside, add to ground beef. Cook until ground beef is browned. Drain. put back in skillet. Add 1-16 ounce can of kidney beans, and 1-16 bottle of Catalina dressing. Add green parts of scallions. Remove from heat.
Spoon over salad, add cheese.

Serving Size: makes 6 1/2 cup servings (give or take)
